Chocolate Chip Pancakes- 3 Ways

For the pancake mix:

  • 1 1/2 cups of milk
  • 3 eggs, beaten
  • 1 1/2 cups plain flour
  • 1/2 cup chocolate chips
  • 1 teaspoon of bicarbonate of soda
  • Butter- for melting and frying pancake mix in

Melt the butter in a large frying pan on medium heat, then add tablespoon portions of the mix into the pan, frying on each side for a couple of minutes.

For the Strawberry topping:

  • Add fresh, sliced strawberries with whipped cream and dessicated coconut to the pancakes

For the Banana topping:

Chop a ripe banana into slices, and over low heat, cook for 5 mins with the following:

  • 1 teaspoon of coconut oil
  • 1 teaspoon of cinnamon
  • 2 tablespoons of maple syrup

Add flaked almonds to the banana mix and drizzle on more syrup

For the Orange topping:

  • Peel and segment an orange
  • Drizzle with honey and top with chopped hazelnut pieces
